PGI balsamic vinegar of Modena, which requires all raw materials to come from within a protected geographical territory, is produced with grapes of seven specific varieties, including Lambrusco, Sangiovese, Trebbiano, Albana, Ancellota Fortana and Montuni. The vinegar is aged in oak barrels for a year, giving it the unique flavor of aged balsamic of Modena.
