Crevette Gris : Tiny Grey Shrimp

In French they are called ’crevette grise’ or grey shrimp in English. Tiny pre-cooked, de-shelled shrimp tails. They have an intense “shrimpy” flavor. Available frozen. 500 grams.

Recipe for Tomate Aux Crevettes (shrimp in tomatoes):

  • 4 ripe tomatoes, large enough to fill with shrimp
  • 500g package of peeled grey shrimp
  • 1 room temperature egg yolk (not cold)
  • 1 tsp French mustard
  • ½ cup vegetable oil
  • 2 tsp lemon juice
  • Chopped fresh parsley
  • Salt & pepper

Add egg yolk and mustard to a large mixing bowl. Season with a little pepper and salt. Beat the yolk mixture quickly using a large whisk.

Slowly add the vegetable oil, drop by drop, and continue whisking. Don't add oil too quickly. Continue whisking the egg yolk and oil a bit at a time until it becomes thick, creamy, and glossy. Once you have added all of the oil, add the lemon juice. Taste test to check the seasoning and add salt and pepper, mustard, or lemon juice to taste. Ta da! You made mayonnaise! 

Transfer the grey shrimp to a large mixing bowl and mix in the freshly chopped parsley. Incorporate the mayonnaise you just made. Mix well. Scoop the shrimp salad and fill the tomatoes. Serve cold.
