Paddlefish Roe (usa)

I didn't hate it but the hackleback and the white sturgeon were better. I espcially liked the hackleback on a big salty potato chip. I wouldnt get the paddlefish again but I would get the hackleback and the white sturgeon for sure.

I ordered 250g of this Paddlefish roe for a dinner party and received it two days prior to the dinner - kept the tin at the proper temperature during storage for two days &, upon opening the tin on the day of the event, was very disappointed that the paddlefish roe was a very poor texture. No light separation to the eggs. It wasn't just soft as paddlefish roe is, but very "mushy" & like glue. The flavor wasn't bad but the texture was very unpleasant. All at the dinner party agreed that this isn't what is expected from this roe (we've all had this roe several times before). We luckily had also purchased some from another seller (kept in the same compartment at 38 degrees) that was just as expected so we had something pleasant to serve our guests. $198 would've been a good price if the roe was as expected, but far too expensive for the poor texture that we received. (The shipping container seemed fine as the ice packs were still quite solid upon arrival so I doubt the issue happened during shipping.) An unfortunate experience.

The flavor was a bit too unbalanced, which was even hard to mask with creme fraiche and blini. A few eggs had been damaged and we found it to be little mushy, inky and dull-looking,

Just the right amount of brackishness.
