Caviar should never be served or handled using metallic utensils which can ruin the delicate flavors of the caviar. For serving caviar, only spoons made of mother-of-pearl should be used. Mother-of-pearl is a smooth shining iridescent substance forming the inner layer of the shell of some mollusks, especially oysters and abalones.
